Pasta carbonara

Hey pixels, today I have for you this wonderful pasta recipe. It’s easy to prepare and tasteful. Who doesn’t love pasta???  Everybody does!!

Yes, I know we made a carbonara pizza just a week ago. But this pasta recipe is slightly different, I promise. I don’t think it’s too healthy, but it tastes wonderful!! And well, I don’t care about the food calories, so….

So, here is the pasta recipe!! I hope you’ll enjoy as much as I do!!

Ingredients (serves 2):

  • 2  eggs
  • 1 cup finely shredded Menorca cheese
  • 3/4 teaspoons salt
  • 150g fresh mushrooms, sliced
  • 1 clove garlic, peeled and minced
  • fresh pasta
  • optional: 2 more eggs (for poaching them)
  • to sprinke: more grated cheese, fresh parsley

Directions:

Mix 2 eggs, the cheese and salt together in a small bowl. Set aside.

Bring a large pan of water to boil (enough to just cover the pasta), add in the spaguetti and cook as per pack instructions.

Meanwhile, cook the mushrooms in olive oil, until all the liquid is absorbed (about 8-10′). Then turn down the heat to low and stir in the garlic.

By now the pasta should be ready. Spoon out all but approximately 1 tablespoon of excess fat from the mushroom pan, then use a set of tongs to transfer the spaguetti to the mushroom pan. Using tongs rather than draining the pasta transfers some of the pasta water, which helps to thicken the sauce.

Working quickly, pour the egg/cheee mixture into the pan, then lift and lower the pasta in the pan using the tongs — this should coat the pasta in the egg/cheese mixture without the egg scrambling. Add a ladle of the pasta water to the pan, then lift and lower again — this will loosen the sauce slightly. Turn off the heat.

If you’re serving the carbonara with poached eggs, heat again the pasta water. With the water gently simmering, give it a stir, then break an egg into a small bowl and lower the egg into the water. Repeat with the other egg, and simmer for 2 minutes. Remove the eggs with a slotted spoon, and serve on top of the carbonara along with some parmesan and fresh parsley.
