Hey pixels!! I’ve been reading about magic cakes on the Internet for a while, but this has been my first time making one. I’ve found different magic cake recipes: vanilla, chocolate, even banana. But this time, I’ve chosen the vanilla one. I love vanilla flavour, and I’ve made it for my granny, who does not like chocolate cakes so much.
The magic it’s that you get a three layer cake using just one mixture. I was not sure about my result, specially when I find that the mixture was a bit liquid. But I must say it has worked. One mixture, three layers: this cake is awesome!! And the vanilla flavoured pudding layer is the best!! Wow… (next time, I’ll try the chocolate one, my happy pixels, you know I love chocolate).
I didn’t decorate the cake with powdered sugar, but you can do it if you want. I think that the cake is sweet enough, but a bit of sugar on top is always good. I hope you enjoy this cake, my happy pixels!!
- 4 eggs (separate yolks from whites) at room temperature
- 1 tsp vanilla extract
- 3/4 cup sugar
- ½ cup butter, melted
- ¾ cup of all purpose flour
- 2 cups milk, lukewarm
- optional: powdered sugar for dusting
Preheat oven to 190C. Grease a baking dish. Use butter or olive oil.
Add egg whites to a bowl and mix until egg whites are stiff. Set aside.
Beat the egg yolks with the sugar until light. Add butter and vanilla extract and continue beating for another 1-2′ after which you can add the flour and mix it in until fully incorporated.
Slowly start adding the milk and beat until everything is well mixed together. Add the egg whites, a third at a time and gently fold them in using a spatula, repeat until all egg whites are folded in.
Pour batter into greased baking dish and bake for about 40′, or until the top is lightly golden. The baking time could vary greatly depending on the oven, so take a peek at around 35′ and see how it looks.
Sprinkle some powdered sugar after cake has cooled.
