5′ brownie in a mug

Hey pixels!! Do you remeber our cinnamon roll in a mug? I promised you to make a brownie in a mug, and here it is!! An individual but yummy brownie that is ready in just 5′. Can you imagine something better? I doubt it; maybe just another mug recipe: a red velvet cake, a chocolate cake or even a french toast. Everything is possible if you have 5′ and a microwave.

The ingredients you need to make this brownie are almost the same as for the big recipe.  I’m sure you have all of them at home right now, so you can make this awesome cake whenever you want. Maybe it’s not the healthiest breakfast, but it’s perfect when you need something sweet but you don’t have time to bake a full cake.

It’s simple to make. Mix wet ingredients and dry ingredients in two bowls. Then, just add wet ingredients to the dry ones, and microwave. It’s simple as that! Perfect if you live alone, or if you’re the only one that wants to eat cake. Sometimes this happens…

Feel free to add any topping, or to use the kind of milk or coffee you prefer. Actually you can use 1 tablespoon milk and 1/2 tablespoon coffee. Or another kind of oil. But I think olive oil is the best: the flavour is wonderful and it’s one of the healthiest oils. I always use it at home (not for frying); it’s my favourite.

And here is the recipe!!

  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/4 cup brown sugar
  • 1 1/2 tablespoons coffee or milk, at room temperature
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • salt, optional
  • topping: salt, whipped cream…

Sift the flour and cocoa powder together over a bowl.

In another bowl, whisk olive oil, brown sugar, coffee, egg, vanilla and a very small pinch of salt together until blended then pour into the bowl with sifted flour and cocoa powder. Whisk until combined then carefully pour into the mug.

Microwave for about 1’30”. Serve with a sprinkle of salt on top, if you like. Whipped cream or ice cream are good options, too.

Do you like brownies, my happy pixels? Are you going to try this recipe? Please, let me know in the comments below.
