Lemon Pudding Cake

Hey pixels!!! This is my third lemon cake, after the lemon sponge cake and the lemon meringue pie. Do you remember them? This one is slightly different, and it has two layers: cake and pudding, but just one dough. Yes, it’s like two desserts in one. I don’t know how this magic is made, probably the meringue helps a bit. But I know it’s awesome, soft and fluffy, with a nice and fresh lemon taste.

Winter is the best time for citrics, so it’s the perfect moment to make this cake. Now, you’ll find fresh lemons, full of juice and vitamins. To make the juice for the recipe, I’ve just used one lemon. It had lots of juice.

Look at this picture to see both cake layers. If you look close, you’ll see them. I baked the cake in a 20cm round mold, but feel free to choose another kind of mold. Be careful, this may change the baking time. Mine was ready in 38′.

Ingredients:

  • 4 eggs, whites and yolks separated
  • 1 cup sugar
  • 5 tablespoons unsalted butter, melted and cooled
  • 1/4 cup all-purpose flour
  • 1/2 cup fresh squeezed lemon juice
  • 1/4 cup whole milk
  • grated zest from 1 lemon
  • powdered sugar to decorate

Directions:

Pre-heat your oven to 170º. Grease a baking dish with a bit of olive oil.

Beat the egg whites on medium-low speed until they turn foamy. Then increase the speed to medium-high and beat until glossy peaks form, about 1-2′.

In a second bowl, combine sugar, butter and flour. Add the egg yolks, lemon juice, milk and lemon zest. Mix until well combined, scraping down the sides of the bowl as necessary. With a rubber spatula gently fold in the beaten egg whites, folding in about 1/3 at a time, until they are just incorporated.

Pour the batter into your greased baking dish. Transfer to your pre-heated oven and bake until the cake is set and the top is golden brown. Depending on the size and depth of your dish, this could take anywhere from 30-40′ .

Remove from the oven and allow the pudding cake to cool slightly. Dust with powdered sugar before serving. This cake can be enjoyed slightly warm, room temperature or cold.
