Hey pixels!! Salads are not just for Summer anymore!! Here I have a wonderful and warm salad recipe to enjoy salads all year. Actually this salad it’s hidden inside a mini round bread, and it has a fried egg and a yummy butter based sauce.
Ingredients are just a suggestion. Feel free to change them. You can use almost everything you have at home. My recipe is made with frozen spinach and the content of 2 food cans: peppers and mushrooms. Really. Yummy!!
There is nothing better than a warm dish, full of vitamins and proteins. Winter is not over, so it’s better to eat comfy and healthy. Warm food are not just soups!! Warm salads are a reality too!!
I’ve made the recipe just for one, but if you double the amounts it can be a great brunch for a couple. Enjoy it!!
Ingredients (serves 1):
- 1 small, round bread
- 1 egg
- 3/4 small can mushrooms
- 1/2 can red peppers, sliced
- a small bunch spinach, defrosted or fresh
- 1 tablespoon butter, melted and cooled
- 1 teaspoon lemon juice
- 1 teaspoon fresh parlsey, chopped
Preheat oven at 110ºC. Bake your bread for 5-6′. It’s better if it’s a bit warm.
In 2-3 tablespoon of olive oil, cook mushrooms for 7-8′. Add peppers and cook 3-4′. Finally, add spinach and cook 2-3′.
Cut the top of your bread (see pictures) and make a hole inside. Fill hole with your veggie mixture.
Fry the egg.
To make the sauce, add lemon juice and parsley to the melted butter. Sprinkle sauce over your bread and egg.
