Tangerine Cupcakes

Hey pixels!! Following with our Valentine’s Day posts, today  we suggest this cupcake recipe, made using one of the best seasonal fruits: tangerine. Its juice it’s sweet and yummy, and makes this cupcakes awesome.

Why not sharing this recipe with your boyfriend/girlfriend, or with your friends? They can be part of a romantic meal at home, or part of Galentine’s Day party. Cupcakes are that versatile.


This time I didn’t had any ziplock bag or pastry bag to decorate, so I frosted my cupcakes using a spoon. The result is not that nice, bur it’s yummy anyway…

And here is the recipe!!



  • 115gr butter
  • 220gr sugar
  • 3 eggs
  • 200 flour
  • 1  ½ teaspoon baking powder
  • 60 ml milk
  • 60 ml tangerine juice
  • 1 teaspoon tangerine zest


  • 250gr unsalted butter, at room temperature
  • 250gr powdered sugar
  • 4 tablespoons tangerine juice



Preheat oven at 180ºC

Beat butter and sugar until fluffy. Add eggs, one at a time, and keep beating until incorporated.

Add 1/3 flour and baking powder. Add milk, 1/3 flour, tangerine juice and the rest of the flour. Finally, add tangerine zest. Keep beating all the time.

Fill cupcake molds until 3/4  (they will rise). Bake for 15-20′. Allow to cool before frosting.

Make the frosting: In medium bowl, mix powdered sugar and butter with spoon or electric mixer on low speed. Stir in 1 tablespoon of the juice.

Gradually beat in just enough remaining juice to make frosting smooth and spreadable. If frosting is too thick, beat in more juice, a few drops at a time. If frosting becomes too thin, beat in a small amount of powdered sugar. 

Frost your cupcakes. Eat. Repeat.
