Vegetarian empanadas

Hey pixels!! Here is a good and cute appetizer that you can make in just 20′. If you have unexpected guests, or if you want to eat something healthy while watching TV (maybe cycling?).

Eat them warm, inmediately after making them. It’s their best moment. Don’t wait (or your friends will eat yours, too).

If you want a less healthy version, you can dip your empanadas in some kind of sauce. Yummy!!

Ingredients:

  • 16 pastry rounds (it’s ok if you buy a rectangle puff pastry and make rounds using a glass or a mold)
  • veggies, cubed and cooked (I used my canneloni veggies leftovers, see the recipe here)
  • optional: 1/4 cup goat cheese
  • 1 tablespoon butter, melted

Directions:

Preheat oven at 190ºC

Fill pastrie rounds with veggies and, if you’re using, a bit of goat cheese

Close them, and use a fork to seal the edges.

Brush surface with melted butter.

Bake for 12-15′

Note: you can make sweet versions of this recipe just changing the filling. Instead of veggies, try with jam or custard. A nice breakfast or dessert.
