Hey pixels!! Today my mum and me have made this traditional dessert. It’s made with one of our great Winter seasonal veggies, sweet potatos. She has teached me the recipe; sometimes I’ve helped her before today, but it’s been a long time since last time we did this pie. I could not remember the recipe at all. It’s easier than I remembered; this time I won’t forget it!!
You just have to boil your sweet potatos, add a few ingredients and bake. Just that!! The result is amazing. And now is the best time to make one, because Winter is the best time for sweet potatos.
We have celebrated a little familiar lunch today, and this has been our dessert. But you can make it whenever you want. My theory is that it’s ok to eat pie or cake at any moment. You don’t need to be celebrating something. Just enjoy the moment.
- 1800g sweet potatos, peeled and halved
- 1 large egg (or 2 small)
- 300g sugar (350g if you prefer sweeter pies)
- 15g vanilla pudding powder
- to decorate: cinnamon powder
Boil sweet potatos for 20-25′, or until they are tender. Allow to cool completely.
Preheat oven at 200ºC
In a large bowl, mash sweet potatos with a fork or a potato masher. Add egg, vanilla powder and sugar. Mix well.
Pour this mixture in a baking mold. Decorate with cinnamon powder.
Change the oven temperature to 160ºC. Bake for 35-40′
Allow to cool completely before eating.
