Warm & comfy Winter veggie soup

Hey pixels!! I have great news!! Finally temperatures are starting to get colder!! Maybe this is not a good new if you live in a really cold place, but here warm temperatures last about 6-7 months, and Winters are not that cold… So it’s a nice change to be able to eat a warm, comfy soup without sweating… Like this one. I love soups, warm teas and coffees, wool mittens and scarves.

This is an  easy and quick recipe. It requires just a couple of ingredients and the result is wonderful. I hope you like it!!


Ingredients (serves 1):

  • vegetable stock
  • 3/4 cup cubed veggies (I used green beans, eggplant and carrot)
  • 1/2 cup pasta
  • 1/2 onion, chopped
  • 1 garlic clove, minced


Cook onion in olive oil for 5′, until soft. Add garlic and cook 1′ more.

Add your veggies. Cook 5′.


Cover with vegetable stock and bring to a simmer. Then, add pasta and cook on low heat until pasta is done.

Note: feel free to use your favourite veggies.

  • caldo vegetal
  • 3/4 cups de verduras en cubos (he usado una mezcla de berenjena, zanahoria y judías verdes)
  • 1/2 cup de pasta
  • 1/2 cebollada, laminada
  • 1 diente de ajo, laminado


Pocha la cebolla en aceite de oliva durante 5′, hasta que esté tierna. Añade el ajo y cuece 1′ más.

Añade las verduras y cuece 5′ más. Vierte el caldo vegetal y lleva a ebullición. Agrega la pasta y cuece a fuego lento hasta que esté hecha.

Nota: usad vuestras verduras favoritas.
