Halloween Pumkin Pie

Hey pixels!! It’s Halloween!! Our celebrations are tomorrow, in Spain we don’t celebrate Halloween so much. But this year I  wanted to make my first pumpkin pie, so I did it! (Usually I make this sweet little cuties).

What do you make on Halloween, my happy pixels? Are you going to a party? Do you carve pumpkins or make pies? Now you can make this one. You won’t regret it, I promise. 🙂

Ingredients :

  • 1/4 cup home made pumpkin puree
  • 1/8 cup evaporated milk
  • 2 eggs
  • 2/3 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • a teaspoon vanilla extract
  • 1 store bought pie crust
  • meringue: 2 egg whites + 60g sugar

Directions:

Preheat oven at 165ºC.
Grease a round mold; cover with your dough. Use a fork to make some holes on the dough.
Prepare your filling whisking all the ingredients together in a bowl.
Pour filling into the mold.
Bake for about 40-45′, or until the crust is golden brown and the filling has set. You can test it by inserting a fork; if it comes out clean it has finished baking.

While the cake is cooling, you can make the meringue. You’ll find the directions here. Spread it over your cool pie.

Ingredientes:

  • 1/4 cup de puré de calabaza casero
  • 1/8 cup de leche evaporada
  • 2 huevos
  • 2/3 cup de azúcar moreno
  • 1/4 cucharita de canela en polvo
  • 1/2 cucharadita de esencia de vainilla
  • 1 lámina de hojaldre ya hecha
  • para el merengue: 2 claras de huevo y 60g de azúcar

Instrucciones:

Precalienta el horno a 165ºC

Engrasa un molde redonde y cubre el fondo con el hojaldre. Pincha con un tenedor, haciendo pequeños agujeritos (hará que no se hinche en el horno).

Prepara el relleno mezclando todos los ingredientes en un bol.

Vierte el relleno en el molde y hornea durante 40-45′, hasta que el hojaldre esté dorado y el relleno, firme. Puedes comprobarlo pinchando en el centro con un tenedor. 

Mientras la tarta se está enfriando, preparad el merengue siguiendo las instrucciones que encontraréis aquí. Decorar la tarta una vez se haya enfriado del todo.
