Best baked omelette ever

Hey pixels!! Do you remember our nice broccoli soup? We did it on Monday, and I promised you the recipe of the omelette which is next to the soup. And here it is: the easiest and most tasteful omelette recipe!! Bon appetit!!


You can cook it using a pan, in a more traditional way. But, do you want to know a secret, my happy pixels? I can’t cook an omelette using a pan: I always break them…. So sad, I know.

So I bake my omelettes. I say the reason is because I find them healthier if cooked in the oven, but we know the truth…. That’s not that terrible, my happy pixels. The result is good and I have less work making them. 😉


This is a versatile recipe; this is the basic, but you can add more ingredients, like vegetables or pieces of vegan bacon. It’s up to you, my happy pixels!!

Ingredients (serves 3-4 person):

  • 1 onion, chopped
  • 5-6 medium potatos, peeled and cubed
  • 3-4 eggs, beaten
  • optional: 2-3 fresh laurel leaves


Fry potatos and onion in vegetable oil until tender. Add laurel leaves, they will leave a wonderful taste and smell.

Drain the oil excess and mix them in a bowl with your beaten eggs. Add salt and pepper to taste. At this point, if you want, remove laurel.

Pour your uncooked omelette into a greased round mold. Bake in a preheated oven at 180ºC until its firm and a bit brown, but no overcooked, about 20-25′.

Serve with a soup or a salad.

  • 1 cebolla, laminada
  • 5-6 patatas medianas, peladas y cortadas
  • 3-4 huevos, batidos
  • opcional: hojas de laurel


Freír patatas y cebolla en aceite vegetal, hasta que estén tiernas. Añadir el laurel durante la cocción: le dará un sabor y olor deliciosos.

Escurrir el exceso de aceite y verter sobre los huevos batidos (en un bol). Mezclar bien; quitar las hojas de laurel si queréis.

Verter la mezcla en un molde redondo engrasado. Hornear en un horno precalentado a 180ªC, hasta que esté firme y un poco marroncito, pero sin llegar a estar demasiado cocido, sobre unos 20-25′.

Comer con una sopa o una ensalada.
