Hey pixels, lately I’ve been making a lot of new breakfast recipes, I know… Have you tried them at home?? 😉 This one is wonderful!!! And a bit healthy: it contains natural fruit juice and whole wheat flour… well, maybe a lot of sugar, too. But you can skip the glaze for even a healthier version!!
Gracias 😉
No, now I’m serious. Maybe it seems like making the syrup and the glaze it takes a lot of effort, but I made both in less than 5′, so it’s not a lot of added time…. And the recipe is really easy. You’ll be satisfied with this cake, I promise 🙂
It’s a perfect breakfast; you can eat it with a cup of coffee or a tea. And you can take a piece of cake with you if you eat at your office or if you don’t have time to have breakfast at home!!
Now I’m sure you are expecting the recipe!! Here it is, my happy pixels!!
Ingredients:
Cake:
- 1 1/2 cup whole wheat flour
- 2 teaspoons baking powder
- 1 pinch salt
- 2 teaspoons orange zest
- 1 plain Greek yogurt
- 1 cup sugar
- 3 eggs
- 1/2 cup olive oil
- juice from 1 orange
Syrup:
- 1/4 cup powdered sugar
- 1/4 cup orange juice
- 1 teaspoon orange zest
Glaze:
- 1 cup powdered sugar
- 2 tablespoons orange juice
Directions:
Preheat the oven to 180ºC. Grease a round pan with olive oil.
In a medium bowl, whisk together all the cake dry ingredients.
In a large bowl, stir together the cake wet ingredients. Pour the dry ingredients into the wet ingredients and mix until just combined, with no lumps.
Pour into the prepared pan and bake for about 35′, or until a fork inserted in the center comes out clean. I suggest you start checking after 30′.
Allow the cake to cool to a room temperature, about 30′ before unmolding it; transfer it to a plate. Prick the cake all over with a fork.
Whisk the syrup ingredients together, and then drizzle the syrup all over the cake. The syrup will seep into all those fork holes you just made.
Now whisk together the glaze ingredients. Glaze the top of the cake and allow 45 minutes or so for it to dry before serving. You can make the cake the night before easily, it will remain ok to eat for 2-3 days (outside the fridge).
Do you usually eat cake for breakfast? Or healthier recipes? Please, let me know in the comments below.
¡¡Hey pixels!!
