Mexican wedding cookies

Hey pixels, we are in a brand new year!! It’s time to celebrate it!!!

What’s the best way to celebrate something??? Yes, you guessed it right, my lovely pixels: making some cookies!!!! 😉 Eating something sweet is always a proper way to celebrate, don’t you think???

This recipe is based on this wonderful one from The Richmond Avenue, a great blog. You can read the original here. I’ve been looking for the moment to make them since I read the recipe… Now I’ve found it!!

Let’s start!!!

Ingredients (it makes about 35-40 units):

  • 1 cup butter, softened
  • 2 cups flour
  • 1 cup powdered sugar, divided into 2
  • 1 cup nuts, chopped

Preheat oven to 180ºC.

Beat butter and 1/2 cup powdered sugar until light and fluffy. Add flour in two times, beating until well combined. Add nuts.

Roll into small balls and place on a baking tray.Bake for 14-15 minutes, until bottoms are lightly browned.

Allow to cool; then, roll each warm cookie in remaining powdered sugar, until well coated.

I hope you like them!!! Thank you, Jasmine, for the inspiration, I really enjoy your blog!!!

And you, my happy pixels? Do you know any similar recipe? Which kind of cookies are your favourite? Please, let me know in the comments below.
