Easy & vegan pasta (3 ingredients)

Hey pixels, how are you? Are you ready for new year??? Now we have than less than 48 hours of 2015…. Are you excited for the party???

This is maybe the last recipe we share this year 🙂 I really hope you like it. It’s an easy and tasteful one, it can be made in less than 30′ and it only needs 3 ingredients. So it’s perfect for the first day of January, when you get up late and the last thing you want to do is cooking… Don’t worry, it happens to the best of us… lol

 

How do you celebrate New Year’s Eve? Here we eat grapes at midnight.

Are you going to make a big party? I hope you’ll have fun 😉 And the following day you can eat this great pasta!!! That’s cool, lol.

Ingredients (serves 2):

  • 1 1/2 cup pasta (I used the same giant shells as in this soup)
  • 1 can mushrooms (mine was about 185g)
  • 200 ml soy cream
  • Optional: oregano and grated Menorcan cheese (or a vegan grated cheese)

 

Directions:

Cook the pasta acording to the package instructions.

At the same time, cook the mushrooms in a bit of olive oil and salt until all the liquid is absorbed. (If you want, add some oregano here).

Add the soy cream and cook 7-8′ more.

Drain the pasta, mix with the sauce and serve warm. Optional: add here the grated cheese.

Easy?? Delicious?? It is, I promise.
