Vegan Christmas soup (4 ingredients)

Hey pixels, are you interested in a quick, healthy and delicious soup recipe? It’s a perfect starter for Christmas and really easy to make. You simply put the ingredients in a saucepan and let them cook… That leaves you time to do the important things, like relaxing yourself before the party… ๐Ÿ™‚


But don’t say this to your guests; they’ll think you’ve spent hours in the kitchen. ๐Ÿ˜‰

I hope you like it. Actually it’s a vegan version of a traditional chicken soup people use to eat for Christmas here. No cruelty, less ingrendients and easier to make, but with all the flavour. Perfect.


Ingredients (serves 3-4):

  • 1500ml vegetable stock
  • 1/3 cup vegetable pure
  • 3 cups frozen vegetable (the frozen mix I used includes broccoli, cauliflower and carrot)
  • 2 cups pasta (I used this giant shells because they are so festive, but you can use the kind of pasta you prefer)



Pour the stock and the pure in a saucepan. Heat until it starts boiling.

Add the other ingredients. Cook them on low heat until pasta is done.ย (Tip: check if it the pasta is cooked for yourselves instead of trusting the package directions, most of times it needs more time than the time indicated there).
