Eggnog pound cake

Hey pixels, do you remember the wonderful eggnog we made last week? It’s not only to drink, you can cook with it too… (happy face)


This is the first cake I’ve ever made using eggnog. I must say I love it, and the wonderful eggnog glaze makes it even better!!! (really happy face)

This is great for a breakfast, your Christmas brunch or whenever you’re hungry and in need for something sweet and special.

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 cup butter (room temperature)
  • 1 cup sugar
  • 2 eggs
  • 3/4 cup homemade eggnog (you’ll find the recipe here)

To make the glaze you’ll need:

  • 1/2 cup powdered sugar
  • 1 tablespoon eggnog (see recipe above)



Preheat oven at 176ΒΊC

Sift together flour, salt and baking powder; set aside.

Cream butter until smooth, add in sugar until all combined. Beat until light and cream and colour pales.

Add in the eggs, one at a time, beating well before each addition.

Alternating the flour mixture and eggnog, starting and ending with flour, add in both. Mix until smooth.

Pour batter into a greased loaf pan. Bake for 50-55′. Allow to cool completely.

To make the glaze, whisk both ingredients together until desired consistency. Spoon over the cooled cake; let glaze set up for a few hours before eating or storing.
