Hey pixels, it’s cold outside!!! These days it’s been rainy and windy here, and that means it’s really unconfortable to go outside… But it’s something all of us must do, we must go to work, to our classes, to the gym…
But doing all that stuff is not so hard if you know a warm and cozy reward is waiting for you at your home, isn’t it? What about if you’ve made this wonderful and edible prize in the morning or the previous night? A vegan cauliflower soup, for example?
I don’t know about you, but having a warm soup under my blanket while watching TV is a great moment for me… And trust me, this soup is perfect for that. A great flavour and so healthy you can eat two full bowls of it if you want… without the guilt!!!
Ingredients (serves about 3):
- 1 cauliflower
- 2 leeks (chopped)
- 150ml soy cream
- vegetable stock
- 2 medium potatos (peeled and cubed)
Clean and cut the cauliflower into pieces. Set aside.
Cook the leeks in olive oil for 5′. Add the vegetables, cover with stock and cook until they are tender (about 25′).
Blend and turn the pure to the saucepan. Add the soy cream and cook 5′ more. Serve warm.
If you want, decorate with a bit of raw olive oil on top. It’s great also with a toasted slice of bread.
