Healthy vegan breakfast cookies

Hey pixels, do you like cookies? I love them, specially if they are yummy, healthy and I can eat it whenever I want… 😉

This recipe is perfect for breakfast, and to eat on the go, specially those mornings when you’re in a hurry and you don’t have enough time to have a proper breakfast at home.

They are soft (if you don’t like soft cookies, simply bake them a couple of minutes more) and delicious thanks to the jam flavour. I use a jam which contains both flavours: apple and pumpkin. It’s great, and perfect for Autumn!!! But if you don’t find it you can always use half of every flavour. Or any other kind of jam you have at home. I hope you like them!!

Ingredients (makes about 20 units):

  • 1 cup vegan margarine
  • 1/2 cup sugar
  • 1 cup whole wheat flour
  • 1/2 cup apple & pumpkin jam
  • 1/3 cup vegan dark chocolate chips
  • 1 teaspoon baking powder
  • 1 pinch salt

Directions:

Preheat oven at 190ºC

Mix flour, baking powder and salt. Set aside.

Beat margarine and sugar until creamy and fluffy, about 4-5 minutes. I use an electric mixer.

Add jam and continue beating for a couple of minutes. Then, add the flour mix. Keep mixing until it’s fully incorporated. The last step is adding the chocolate chips.

Cover two baking pans with parchment paper. Using a spoon, take dough portions and shape them (more or less round). Bake for 11′.
