Hey pixels, as I promised to you, here is a recipe which uses an Autumn ingredient: pumpkin!! It’s a vegan, warm and healthy soup, perfect to eat while it’s raining outside.
Like most of my recipes, it’s easy and quick to make and it requires few ingredients (only five). So it’s perfect to make for unexpected guests or whenever you are hungry. Trust me, no one will be disappointed by this soup.

Ingredients (for 2 person):
- 2 cups pumpkin (peeled and cubed)
- 1/2 cup pasta (it’s better fresh pasta or a kind that does not require a lot of cooking time)
- 1 medium potato (peeled and cubed)
- 1 leek (chopped)
- vegetable stock
Cook the leek in olive oil for 5′
Add the pumpkin and potato. Cook 2′ and cover with vegetable stock
Cook until the veggies are tender. Then, add the pasta and cook it.
